Lasagna

Ingredients

__ 6 TBS. spaghetti or pizza or tomato sauce or condensed tomato soup or crushed tomatoes or ketchup or barbecue sauce or poultry sauce or any combination of these
__ Italian seasoning (optional)
__ 1 uncooked lasagna noodle, broken in half, OR 1/2 c. pasta, any type, cooked and cut into pieces to fit the dish if necessary
__ 1/2 c. meat and/or vegetables, cooked, sliced or chopped or shredded-cooked chicken, cooked ground beef, pepperoni, cooked ham slices, cooked and crumbled bacon, cooked and crumbled sausage, salami, hot dog, broccoli, zucchini, mushrooms, peppers, onions, or anything else you like in your lasagna (make sure it's been cooked already)
__ 4 TBS. ricotta or cottage cheese
__ 4 TBS. or more cheese, any combination, shredded
__ 1 TBS. or more Parmesan cheese, grated (optional)

Directions

(1) Place 2 tablespoons sauce in the bottom of a single-serving, microwave-safe dish. Sprinkle some of the seasoning on the sauce. (2) Place one piece of lasagna noodle or half of pasta on top of the sauce. Cover the noodle or pasta with 2 tablespoons of sauce and some of the seasoning. Arrange one half of the meat and/or vegetables over the noodle. Spread one half of the ricotta cheese over that. Sprinkle one half of the shredded cheese over the ricotta cheese. Lay the remaining noodle piece or the rest of the pasta on top. (3, a repeat of 2) Cover with the rest of the sauce and some seasoning, followed by the rest of the meat and/or vegetables, then the rest of the ricotta cheese, and finally the rest of the shredded cheese. (4) Sprinkle Parmesan cheese on top, if desired. (5) Cover the dish with plastic wrap, pulling back one corner to vent the steam. If the dish is flat-bottomed, turn a saucer upside down on the microwave floor and balance the dish on top. For lasagna noodle, microwave on medium for 10 minutes, turning the dish halfway every 3 minutes, until the lasagna noodle feels soft when you pierce it with a fork. For cooked pasta, cook on high 4 to 6 minutes, turning dish every 2 minutes, until heated through and bottom of the dish is warm to touch. Let the covered dish stand for 5 minutes before serving.

Makes one serving. Do not double more than once.
