Ketchup and Friends

Ingredients

__ 1/2 c. tomato sauce or tomato puree OR 1/4 c. tomato paste plus 1/4 c. water (use less water for a thicker sauce)
__ 2 TBS. white or brown sugar (or more, if you like it sweet) or 1-1/2 TBS. honey
__ 3 TBS. vinegar (any flavor) or lemon juice
__ 1/2 tsp. salt (or more, to taste)

Directions

Combine all ingredients thoroughly. Refrigerate overnight or simmer for a few minutes, to allow flavors to combine.

For a pizza or italian sauce: add 1/4 tsp. each finely crushed oregano or marjoram, basil or tarragon or summer savory, thyme, and rosemary (or some combination of these, if you don't have one or more; reduce the sugar if you don't like your pizza sauce sweet).

For a barbecue sauce: add 1 TBS. Worcestershire sauce OR soy sauce OR terriyaki sauce and 1 tsp dry mustard OR 1 TBS. prepared mustard; use vinegar to thin to desired consistancy, and add more brown sugar, if desired.

For cocktail sauce: add 1 to 3 TBS. horseradish and 3/4 c. chili sauce OR 1/2 to 1 TBS. Worcestershire sauce plus 2 TBS. lemon juice (either addition is optional).

For salad dressing: to one-third of this recipe (1/4 c.), add 1/2 c. chili sauce, 1 c. mayonnaise, and 1 TBS. pickle relish or finely chopped pickles (ketchup is optional).

Makes about 1/2 cup (more for the variations).
