Vegetable Bake

Ingredients

__ 8 oz. frozen or canned vegetables (any combination) or 1 c. cooked vegetables or 1/2 c. vegetables plus 1/2 c. pasta (noodles, spiral, shells, etc.)
__ 1/2 can (1/2 c.) condensed cream soup (any kind, such as cheese, mushroom, or broccoli)
__ 1/4 c. milk OR 1/4 c. yogurt or sour cream plus 2 TBS. milk
__ 1/4 c. cooked mushrooms, cut into slices or small pieces (any kind; optional)
__ 1/2 c. french fried onions or shoestring or crush potato chips plus 1/4 c. dried onions
__ 1/4 c. shredded cheese (optional)
__ 1/4 c. thinly sliced cooked meat (ham, roast beef, turkey, chicken, lunch meat, etc.)

Directions

Combine vegetables, soup, milk, and half of french fried onions in a 1-quart microwavable dish. Heat, uncovered for 10 to 12 minutes on high or until vegetables are cooked through. Stir halfway. Sprinkle with remaining french fried onions. Top with cheese and meat, if desired. Microwave for an additional minute.

Makes two to three servings.
