Saucy Potato

Ingredients

__ 1 medium potato, unpeeled and cut into 1/4-inch slices OR 1 c. hash browns, any flavor, mostly thawed if frozen
__ 1/4 tsp. Italian or other seasonings (optional)
__ 1/4 c. cheese, any kind, shredded (optional)
Pizza Style
__ 1/4 c. or more cooked meat and/or vegetables, sliced or chopped or shredded: chicken, ground beef, pepperoni, ham slices, crumbled bacon, crumbled sausage, salami, mushrooms, peppers, onions, or anything else you like on your pizza (make sure it's been cooked already)
__ 1/4 c. or more spaghetti or pizza or tomato sauce or condensed tomato soup or crushed tomatoes or ketchup or barbecue sauce or steak sauce or poultry sauce or any combination of these
Casserole Style
__ 1/4 c. or more cooked meat and/or vegetables, sliced or chopped or shredded: chicken, cooked ground beef, cooked ham chunks, mushrooms, peppers, onions, chopped broccoli, peas, or anything else you like in your casserole (make sure it's been cooked already)
__ 1/4 c. gravy, any flavor, or condensed soup, any flavor

Directions

Spread potato slices evenly over bottom of a microwave-save dish. Arrange meat and/or vegetables evenly over potatoes. Cover dish with plastic wrap, pulling back one corner to vent the steam. Cook for 8 minutes on high, turning the dish halfway after 4 minutes. Test the potatoes with a fork to be sure they're soft. If not, microwave for 2 minutes more on high. Evenly spread the sauce over the potatoes. Then sprinkle the seasoning over the sauce, if desired. Then top with the cheese. Cook uncovered for 1 minute on high. If the cheese has not started to melt, cook for 30 seconds more or until cheese is just beginning to melt. Let stand for 3 minutes while the cheese finishes melting.

Makes one servings.
